Mérida, Yucatán — Chef Rick Bayless and his crew have begun filming the 11th season of his TV series “Mexico, One Plate at a Time.”

Filming began yesterday in Mérida, and will remain in Yucatán for all 13 episodes, bringing tremendous exposure to the region and its culinary culture.

His crew arrived early at the Lucas de Gálvez market, but wasted no time later to head to the restaurant Manjar Blanco, off Parque Santa Ana, where the TV celebrity held a press conference last July announcing his Yucatecan-themed season.

Here is a “behind the scenes” video his team posted, showing what the chef says is a rare look at the process behind recado spice paste production.

His YouTube channel promises to have more videos “almost every day” while they film their program. Already, a feast at Manjar Blanco is portrayed in mouth-watering detail.

Bayless, 62, lives in Chicago and has six restaurants and a prepared foods business aside from his popular PBS series and several books.
