4 questions for Chef Christian Bravo

With New Year’s Eve around the corner, we asked Chef Christian Bravo of the gorgeous new Sanbravo Seafood & Steakhouse four quick questions about ringing in the new year.

New Year’s Eve is around the corner. What does the day mean to you personally?

The end of the year brings a lot of excitement, parties and also a lot, a lot of work. All the endings and beginnings I personally see as a new opportunity to achieve what I set out to do.

Do you take time off when it gets close to midnight, or are you too busy? How do you celebrate New Year’s?

I definitely take time to breathe and give thanks for all the good and bad and also to dream of new beginnings. Since I dedicate myself to the kitchen at the end of the year, I celebrate working in the kitchen. I enjoy the rush and the pressure that strangely makes all the chefs happy.

Of course, it’s easier on everyone to go out for New Year’s, and you’re running the kitchen at Sanbravo. What’s happening there in its first year?

The kitchen will be happy and committed to doing all the best to be able to give a Michelin-level dinner. We’re looking forward to filling the dining room to serve people to enjoy everything we will do.

What’s your idea of the perfect New Year’s celebration? What is the appropriate food to mark the occasion?

I think that at the end of the year, “perfect” would personally be the same as when I was a child, with my parents, cousins, uncles, the same food accompanied by my family, my wife and my daughters.

For this celebration, you should not miss grapes, champagne and dishes such as marinated pork leg, apple and walnut salad, a beef filet with cabrales sauce (blue cheese native to Asturias, in the north of Spain) and the traditional turkey.

You’re a young man and have accomplished so much. What do you expect to be doing in 2019?

In 2019 we start another restaurant, opening in a beautiful area of ​​the city, Paseo 60. I want to strengthen our teamwork, I want to travel abroad, exercise more and earn a master’s degree or diploma in either wine or restaurant management.
