Lobster season begins Wednesday, July 1, and Yucatán leads the nation in its harvest. About 1,200 fishermen work in 315 small boats and 28 large vessels to haul in these delicious crustaceans.

In 2014, roughly 500 tons of lobster, worth 70 million pesos was recorded. Most of the lobsters feeds the Riviera Maya while 15% is exported to the European Union, mainly France.

Sustainability guidelines call for a minimum catch size of 135 millimeters in length across the abdomen; the capture of females in stages of reproduction is prohibited. Lobster season ends Feb. 28 next year.

These guidelines are set in coordination between government authorities and private fisheries to prevent over-harvesting.
